At present, there are two types of non stick pot coatings: Teflon and ceramic coatings. Teflon coatings are mainly fluoropolymers, also known as "plastics". The initial component is polytetrafluoroethylene, which is known as the "king of plastics" and has the characteristics of chemical corrosion resistance and aging resistance. The main component of ceramic coatings is silicon dioxide, which is a natural inorganic product used for the inner wall of cookware. The particle size of the material can reach the nanometer level and will not produce toxic substances.



Although stainless steel non stick pots and ceramic non stick pots are constantly developing and innovating, fluoropolymer non stick pots still dominate the market. Under normal temperature conditions, the non stick coating on the pot will not release toxic substances. Because the decomposition temperature of polytetrafluoroethylene is 350 ℃, it begins to become unstable at 260 ℃. So when frying vegetables, as long as the temperature is within 260 ℃, no toxic substances will be released.



The normal cooking temperature is actually within 200 ℃, even if the cooking oil is heated to smoke, the smoke point is still between 200-250 ℃. So when frying, the non stick coating on the pan will not release toxic substances, even when frying food.



However, it is necessary to avoid the situation of "dry boiling pot". If the temperature is too high, the coating will decompose, and the decomposed coating will be harmful to the human body. According to data, inhaling smoke from the burning non stick pot coating may cause symptoms such as headaches, fever, and coughing.
